Singgora is a truly amazing experience! Worth a trip to Kota Bharu just for Singgora’s food, atmosphere, location, personable proprietor and pleasant staff. Singgora serves classical Kelantanese cuisine, cooked using traditional methods with fresh and seasonal ingredients. Our meal included snails (siput) foraged from local padi fields cooked in herbs and spices, fried free range chicken (ayam kampong), prawns with stink bean (petai), local mushrooms (kulat sisir), Ikan tuko (small stingray) assam, sea bream (Ikan siakap) baked in spices, clams (lala) in spicy sauce, wild leaf (ulam) salad, and much more. Our table was on a deck made of recycled wood, overlooking a stream, adjacent to Singgora’s reclaimed wooden kampong houses. The food was delicious, and the setting glorious. The owner has achieved his vision, an aesthetic grounded in the best of local and traditional, creating a high quality, environmentally friendly, tastefully constructed restaurant and guest house. We booked a table for our final day, not quite knowing what we were walking into.Rumah Singgora stands proudly in the middle of a charming compound surrounded by local plants and green fields that stretched into the distance. It felt like stepping into someone’s beloved kampung home.Then came the highlight. The authentic Kelantanese food, thoughtfully prepared by Abe Mat and his wife. We weren’t just served dishes. Abe Mat personally came to our table to introduce each one, explained the ingredients, and even taught us how to eat them the traditional way.I started off with a fork and spoon, but after the first bite, I set them aside. The food was just too good. Eating with my hands, the traditional Malay way, felt so natural in that moment.If you saw the food spread photo, you'd probably think, 'That's a lot of food for just two people.' Let’s just say, we did a pretty good job, there wasn’t much left by the end!What made the experience truly special was Abe Mat himself. He returned to our table a few times, sharing his passion for preserving Kelantanese tradition and culture. The food was good. The ambience was good. The setting was good, too! I should have brought a deck chair to take a nap after all that good food and nice gentle afternoon breeze.
